Martha Stewart's Everyday Food -Great Food Fast

This cookbook has very bright flavors, quick recipes, and beautiful photographs. Most recipes come together in under half an hour. Everything I've made from this cookbook has been delicious.
The Joy of Cooking was re-released last year in honor of its 75th Anniversary.

Nancy McDermott's Quick & Easy Thai is, as you'd expect, quick and easy. Most of the recipes are pretty good, particularly if you don't have access to a wide range of Thai ingredients. (The book doesn't address making your own chili pastes, probably because the ingredients can be difficlut to find in most places in the US.)
